Among the chatter at this term’s parent Afternoon Tea and Chatter event was the delicious cheese scones created by Ms Ramsden in Food Tech. So, if you long for something in addition to a hot cross bun over the holidays, here’s the recipe.

You’ll need:

260gm plain flour

3 tsp baking power

100gm grated cheese

50gm grated Parmesan cheese

Good pinch of salt

100gm butter, cold and cut into cubes

180ml full cream milk

Here’s how:

  1. Add the dry ingredients into a bowl and mix.
  2. Add Butter and rub in to the flour to make breadcrumbs
  3. Add the cheeses and mix.
  4. Add the milk and bring together using a round bladed knife, until just combined, do not overmix.
  5. Tip onto a floured benchtop and press or roll the dough into a rectangle 2-3 cm thick and cut with a cutter into rounds place onto a baking tray with space between each scone. Brush with a little milk.
  6. Place into a pre heated over 200 C for 14-16.
  7. Serve warm with butter.
