Zucchini, Marrow, Squash or Courgette…?
Our garden delivered some sizeable zucchini recently. Everyone had the chance to feel the weight of our zucchini 'baby' then we recorded our guesses in grams or kilograms.
The average weight of each one was 1.4kg!!
We put this hearty harvest to good use and made 'zucchini two ways' a sweet version of zucchini and cinnamon muffins and a savoury version of zucchini bruschetta with garlic bread and salad.
For the muffins, we grated zucchini and squeezed out of the liquid then gently combined with flour, eggs, olive oil, brown sugar and cinnamon. The bruschetta was made with fried zucchini slices, crispy sage leaves and lemon zest.
