Cookery Incursion with Chef Dylan from Ordain 

On Tuesday 21st October, 2025, 17 students in Years 9, 10 and 11 attended the Head Start Cookery Incursion held on site in the food technology area. This incursion saw Head Start partner with Elisabeth Murdoch College, Chef Dylan, the owner and head chef of Ordain Bistro in Seaford) and Complete Hospitality and Training (RTO).

Chef Dylan provided valuable insights into the hospitality and commercial cookery industry and delivered a hands-on demonstration that showcased impressive techniques for transforming everyday food into restaurant-quality dishes, including gourmet club sandwiches and elevated scrambled eggs.

Chef Dylan demonstrated techniques, such as poaching whole chickens and using the meat to create a gourmet chicken sandwich mix. Students also honed and developed their whisking skills when creating the perfect omelette and scrambled eggs, something that is taught to first year Cookery apprentices at culinary school.

Students were able to enjoy their creations after the session. The Head Start team thank Chef Dylan and the students who participated in this incursion.
