What a wonderful start the Year 3 students have had with the Stephanie Alexander Kitchen Garden Program! For our first recipe, we cooked carrot and zucchini croquettes. The plan was to use the wonderful carrots from our garden, but we discovered that they are a bit harder to grow than we initially thought. However, we managed to harvest a couple of usable ones and will continue to persevere with them. Overall, the croquettes were a huge success, with many students asking for seconds or taking leftovers home to share with their families.

This morning, I was excited to harvest many beautiful, crunchy lettuces for our Lettuce Cup Fried Rice recipe. Rainbow chard was also abundant, along with some healthy-looking radishes and spring onions. Hopefully, today’s recipe will be as successful as last week’s—fingers crossed!
