Recipes from the Environment Leaders

Hi Everyone,

 

We are the Environment Leaders. We have found some scrumptious recipes from our families to share with you. These recipes include fruit, veggies and herbs  we could see in our school kitchen garden. They are mostly easy to make and healthy to eat. 

 

We hope you enjoy making them. 

 

The Environment Leaders:

 

Spicy Asian Cucumber Salad

Your aim is to make a decent bowl of salad.

You need:

  • Bowl
  • Chopping board
  • Knife 
  • Fork or chopsticks
  • Plate (optional)

 

Ingredients:

  • Freshly washed cucumbers (2)
  • Korean chilli flakes
  • Soysauce
  • Abc sauce
  • Washed Spring onion
  • Chilli oil

Method

  1. Place cucumbers on a chopping board
  2. Chop the cucumbers into bite size pieces
  3. Put the chopped cucumbers into the bowl
  4. Add a tsp of chilli flakes, soy sauce and abc sauce to the bowl ( if its not salty enough add more but not too much!)
  5. Stir or mix the ingredients together using a fork or chopsticks
  6. Place the spring onion on the chopping board
  7. Use the knife to chop the spring onion into small pieces
  8. Sprinkle spring onion on top of the salad
  9. (OPTIONAL) place on a plate
  10. Add a tsp of chilli oil for decoration - Enjoy!

 

Lemon Butter

Ingredients

  • 1/2 cup butter
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon lemon zest
  • A tiny pinch of salt

Method

  1. Put the butter into a small pan.
  2. Turn the stove on low heat.
  3. Watch the butter melt until it is liquid.
  4. Pour in the lemon juice and the lemon zest.
  5. Add a tiny pinch of salt.
  6. Stir everything together with a spoon.
  7. Take the pan off the stove.
  8. Let it cool down before eating and refrigerate

Vanilla Strawberry Cake 

What you will need

  • Premade vanilla cake mix 

(Works best with vanilla cake)

  • Jam and whipped cream
  • Fresh strawberries and blueberries
  • Mint for decoration (optional)

Instructions:

  1. Make the cake mix and follow the instructions
  2. Once you have made your cake, split it through the side.
  3. Whip cream with some vanilla essence  
  4. Put your jam and  whipped cream on the bottom side that has been cut, then put the top of the cake back on.
  5. Spread further whipped cream on top
  6. Put strawberries, blueberries and optional mint on top to decorate

Frittata 

Serves: 4

Cooking utensil:non-stick frying pan

Special equipment:baking paper

Preparation time: 20 minutes

Cooking time: 20-30 minutes

 

Ingredients:

1 onion (125g) chopped

400g grated vegetables (e.g. zucchini, carrot)

2 tablespoons (20g) self-raising flour

3 shakes pepper

3 eggs, beaten

½ cup (60g) grated tasty cheese

 

Method:

  1. Cut baking paper to fit the base of the frying pan spray or brush paper with oil.
  2. Combine all the ingredients.
  3. Pour into a frying pan.
  4. Cook for 10-15 minutes until the base is brown.
  5. Turn over onto a plate, remove baking paper.
  6. Return paper to frying pan, slide frittata from plate back into frying pan and continue to cook further 10-15 minutes until brown
