Playgroup Fun: Creativity, Friendship & Sensory Play

"Looking for a new lunchbox idea? These Cheesy Vegetable Pikelets are easy to make, freezer-friendly, and a great way to sneak some extra vegetables into your child's day!"

 

Another wonderful fortnight has been enjoyed at playgroup! The children had lots of fun creating sticker art to decorate their names, showing off their creativity and individuality.

We also introduced a new sensory play activity with coloured beans and pasta. It quickly became a favourite, especially when combined with trucks and diggers for scooping, pouring, and exploring. The children loved getting hands-on and using their imaginations.

 

Each week it is lovely to see the children building friendships and playing together. The play kitchen continues to be a popular spot, along with the playdough table and the cars, where children enjoy sharing, creating, and engaging in imaginative play together.

Cheesy Vegetable Pikelets

These tasty pikelets are perfect for lunchboxes, afternoon snacks, or a quick breakfast on the go!

Ingredients

  • 1 cup self-raising flour
  • 1 egg
  • ¾ cup milk
  • 1 cup grated zucchini (squeezed to remove excess moisture)
  • ½ cup grated carrot
  • ½ cup grated cheese
  • 1 tablespoon chopped parsley (optional)

     

    Method

  1. In a bowl, whisk together the flour, egg, and milk until smooth.
  2. Stir in the zucchini, carrot, cheese, and parsley. 
  3. Heat a lightly greased frying pan over medium heat.
  4. Spoon tablespoon-sized amounts of mixture into the pan and cook for 2–3 minutes on each side, or until golden brown.
  5. Allow to cool before packing into lunchboxes.

     

Tip: These pikelets freeze well, making them a great make-ahead lunchbox option.
