While the kids are on school holidays, why not give these yummy Chocolate Chip Cake Mix Biscuits a go? Please find the recipe below.

What a lovely week we have had at playgroup! It has been wonderful to see the children playing and working together. A couple of them teamed up to create a watercolour painting, while others enjoyed building with the Duplo.

The children have also been having fun threading beads onto pipe-cleaner spider legs. This is an activity they can work on over a few weeks, as there are always plenty of other things to explore, such as reading a book, dressing up as a chef and getting busy in the kitchen café!

Chocolate Chip Cake Mix Cookies

Total Time 22 minutes             Prep Time 10 minutes             Cook Time 12 minutes              Makes 12

Ingredients                                                    

1 package yellow cake mix

1 cup chocolate chips (175 g)

½ cup melted butter (115g) or ½ cup neutral oil

2 eggs

Method

1. Combine cake mix, chocolate chips, oil, and eggs in a mixing bowl.
2. Using an cookie ice cream scoop or your hand, form golf ball-sized balls of cookie dough and transfer to a baking paper-lined baking tray.
3. Bake at 180°C for 10-12 minutes.

4. Enjoy!

    

Tips

• Use butter rather than oil to enhance the flavour and texture
• Experiment with different types of cake mix for a fun twist 
• Adjust the baking time for larger cookies
• Add walnuts, oats or different types of chocolate chips
• Be mindful of the sweetness level and adjust sugar accordingly
