FRUIT ICY POLES

Raspberry and Apple Icy poles                              

 Makes about 4 serves                      

 Ingredients                                                                         250 g / 2 cups raspberries                       

100 ml / generous 1/3 cup water           

3 tablespoons sugar or honey                 

200 ml / generous ¾ cup apple juice

Procedure: 

1. Put the raspberries, water and sugar into a small saucepan. Place over medium heat. Allow fruit to bubble for 2 minutes until fruit is softened.

2. Leave to cool. Transfer mixture to a blender, add the apple juice and blend to combine. 

3. Strain the mixture through a sieve to get rid of the seeds. Pour mixture into ice pole moulds, cover with lids (add sticks, if necessary) Place in freezer for a minimum of 4 hours.

 

Creamy Strawberry and Banana 

Icy poles

Makes about 4 serves

Ingredients

250 g / 2 ½ cups strawberries

1 medium banana, chopped into chunks

100 ml / generous 1/3 cup milk

2 tablespoons sugar/ honey/ maple syrup if needed

Procedure: 1. Rinse the strawberries and remove the green stalks and the leafy bit called the hull.

2. Blend the strawberries, banana and milk. Have a taste and add a little sugar or honey if not sweet enough. 

3. Strain the mixture through a sieve to get rid of the seeds. Pour into ice pole moulds (add sticks if needed) and freeze for 4 hours.
