RECIPE: Pikelets

INGREDIENTS:                                                EQUIPMENT:

2 cups SR flour                                              Wooden spoon, bowl, egg flip, measuring 

2 tablespoons sugar                                    cup and spoon, plate, grater, fork

2 eggs                                                                electric fry pan

250 ml milk

Margarine

VARIATIONS

1 mashed banana or 

1 grated apple or

½ cup sultanas or ½ cup choc chips

May be added.

  1. Measure the flour and sugar and put in the mixing bowl. 
  2. Crack the eggs into the bowl. Measure and add the milk. Add any variations. Mix the pikelets.
  3. Heat electric fry pan and melt a little margarine. Spoon the pikelets into the fry pan. When bubbles start to pop, turn the pikelets over with an egg flip. Put the cooked ones onto a plate.

  Banana Oat Pikelets                 

Ingredients

2 ripe bananas

2 cups oats

1 cup milk

2 eggs

2 tablespoons maple syrup

1 tablespoon of canola or other cooking oil

 

What to do:     Instructions   

  1. Peel bananas and cut into pieces.  Place bananas, oats, milk and maple syrup into a blender or food processor and blitz until a smooth batter.
  2. Drizzle oil in the fry pan. When the fry pan is hot enough, drop tablespoons of the mixture into the fry pan.
  3. Turn when bubbles appear, allow to brown on second side. Lift out onto plates and add extra maple syrup to serve.
