 HOME ECONOMICS DONATION

This week we had a very generous donation to our kitchen of boxes of Christmas icing decorations, packets of glace cherries and packets of shredded wholemeal biscuits from Mark Rose , Woolworths supermarket.  We are very grateful for this donation that will help us with our Christmas cooking in Term 4. 

 

 

Cheesy Muffins

This is a great recipe to include more vegetables or whatever you have in the fridge. Junior students were able to concentrate on their grating, cutting and whisking skills for this recipe. A great healthy snack or lunchbox meal that has lots of cheese to please. 

Ingredients:                                      

1 ½ cups self-raising flour

1 cup zucchini, grated

½ cup pumpkin, grated

½ cup sweet potato, grated

1 cup tasty cheese, grated

2 tablespoons parsley, chopped

½ milk

                                                                    1/3 cup olive oil

                                                                    2 eggs

 

 

 

 

 

 

 

 

 

Method:        

  1. Preheat oven to 180 C or 160 C fan forced. Lightly grease a 12 hole muffin pan.
  2. In a large bowl, combine flour, vegetables, cheese and parsley. In a jug, whisk together milk, oil and eggs. Season to taste. 
  3. Make a well in the center of the dry ingredients. Add egg mixture all at once. Mix lightly until just combined. Spoon mixture evenly into prepared pan, filling each cup until 2/3 full. Bake for 20 to 25 minutes, until cooked when tested with a skewer. Cool in pan for 5 minutes. Transfer to a wire rack to cool. ( Makes 12)
