Our senior elective group have been busy preparing their Christmas cakes for the royal icing. First they brushed their cakes with warm apricot jam sieved. Then icing was unwrapped and placed in the microwave for 50 seconds to soften. Students used cornflour to dust their rolling pins then rolled out icing to the right length and thickness using a template. Corner sections were cut away so the icing could be draped over the cake and the sides pinched together to even up the edges. Next week they will be ready for decorating and taking home.

 

 

 

 

 

 

 

 

Upper juniors completed their Christmas biscuits by spreading on icing in red, green and yellow. They used writing icing pens to add detail to their biscuits. Students did a great job with their designs.
