SALAMI SCROLLS:

          

Ingredients

2 cups self-raising flour

30 g butter, chilled

¾ cup milk

¼ cup tomato paste

1 sprig basil, chopped

1 sprig parsley, chopped 

 100 g salami, diced

1 medium red capsicum, diced

150 g Cheddar cheese, grated 

 

Method:

  1.      Preheat oven to 180 C and line with baking paper on an oven tray.
  2.      Place flour and butter in a bowl, use fingers to rub butter into flour. Mixture          should resemble breadcrumbs. Add milk and mix together to make a soft,              sticky dough. Knead lightly on a lightly floured surface.
  3.      Roll dough into a 30 x 40 rectangle. Spread the tomato paste over the dough,        sprinkle the chopped herbs on top. Top with salami, capsicum and cheese. 
  4.      Roll up from the long side of the dough. Using a serrated knife, cut the roll              into 12 slices. Place the slices on the oven tray and bake for 25 minutes until        brown.
