Pie-Maker 2-Minute Noodle Vegie Frittatas
Makes 12
Ingredients
2 x 72 g packets chicken –flavoured 2 – minute noodles or angel hair noodles
6 eggs
1 large carrot, coarsely grated
1 green shallot, thinly sliced
1 ½ cups frozen peas, corn and capsicum
¾ cup grated tasty cheese
Method
- Cook noodles, following packet directions. Reserving seasoning sachets. Drain well. Set aside for 15 minutes to cool. Use scissors, cut noodles into 12 cm lengths.
- Lightly beat eggs in a large bowl. Add noodles, carrot, shallot, vegetable mix, cheese and use one seasoning sachet. Stir until well combined.
- Preheat pie maker. Spoon ¼ cup of mixture into each hole. Close lid. Cook for 10 minutes or until golden and set. Transfer to a wire rack to cool. Repeat with remaining noodle mixture to make 12 frittatas. Serve.
