PIKELETS OR DROP SCONES
This is a quick and easy recipe for families to try during the holidays as we all have these staple ingredients. If your family love fruit try the variations with apple, banana, or blueberry.
Ingredients:
2 cups self-raising flour
1/3 cup sugar
1 egg
1 ½ cups milk or buttermilk Instructions:
1. Sift flour, add sugar, and make a well, drop unbeaten egg in the middle of the bowl and stir.
2. Add enough milk to make a thick batter and beat well.
3. Have the frying pan well-greased.
4. Drop dessertspoons of mixture onto the frying pan, allowing room for the pikelets to expand.
5. When bubbles appear, turn carefully with a spatula. Cook until lightly browned. Lift onto a cake cooler and cover with a clean cloth. Cover pikelets to keep them soft. Serve buttered or with jam and whipped cream.
Variations:
Apple pikelets: Add one grated apple and a little cinnamon to the mixture before cooking.
Banana pikelets: Add one mashed banana to the mixture before cooking.
Blueberry pikelets: Add ½ cup fresh or frozen blueberries to the mixture before cooking.
