CURRY WARMER

This week our Upper Juniors learned how to make a simple chicken curry. We made a mild curry with one teaspoon of curry powder, cooked vegetables, and chicken pieces in a coconut milk. Students enjoyed this with steamed rice. Some students did a great job trying curry for the first time and experiencing the flavours altogether. You can adjust the level of hotness and add whatever vegetables you have available. Enjoy a family curry meal that is quick and easy to prepare. 

Ingredients                                                             

1 tablespoon oil                                   

1 onion, chopped.                                 

1 to 2 teaspoons of curry powder or paste.

2 ½ cups coconut milk   

1 packet of chicken tenderloins, sliced.

2 cups of mixed vegetables, (e.g. broccoli, green beans, corn, and capsicum)

Seasoning for chicken and vegetables

Rice or noodles to serve.

 

What to do: 

Instructions   

  1. Heat the oil in a large frypan over medium –high heat. Cook chicken tenderloins, 3 minutes either side until cooked. Then remove to a plate. 
  2. Add the onion and cook, stirring for 3 minutes or until the onion is soft. Stir fry vegetables or cook vegetables briefly in the microwave and add to the cooked onion. 
  3. Add the curry powder or paste and cook for 1 minute. Add the coconut milk to the pan and let it simmer for 5 minutes.
  4. Return the chicken to the pan and simmer for 5 minutes, or until the chicken is heated through. Serve with rice or noodles.
