SAVOURY PINEAPPLE TEXAS MUFFINS

This week our senior students had the challenge of how to use pineapple in a savoury recipe. They learned how to combine pineapple, ham, and cheese in this quick and easy muffin recipe ideal for a lunchbox snack. Pineapple is an ingredient that moistens and tenderises meat. Students agreed that ham and pineapple go together on a Hawaiian pizza and were looking forward to trying this muffin recipe. 

 

INGREDIENTS

1 cup self-raising flour, sifted.

½ cup tasty cheese

50g honey leg ham, chopped.

¼ cup pineapple, diced

1 tablespoon parsley finely chopped.

¼ cup milk

70g margarine, melted in the microwave.

1 egg, lightly beaten.

6 patty pans- muffin size

 

 

 

Method:

  1. Preheat oven to 180C. Place flour, cheese, ham, pineapple, and parsley into a small bowl. Stir until combined. 
  2. Add milk, margarine, and egg. Stir well. Grease a 6 hole muffin tin with cooking spray or line with patty pans. 
  3. Spoon mixture into each patty pan. Bake for 20 minutes. Insert a skewer into the centre of a muffin to ensure it is cooked through.
