Challenge: We wanted to make something green for St Patrick’s Day and had a lot of spinach. Seniors prepared a spinach and cheese filling for wraps to make an easy and tasty snack. Instead of making a gozleme pastry from scratch you can use soft wraps instead. 

SPINACH AND CHEESE GOZLEME RECIPE

INGREDIENTS

2 teaspoons olive oil

1 small red onion, chopped finely

1 clove garlic, crushed

200g baby spinach leaves, chopped coarsely

1 egg, lightly beaten

200g feta crumbled

1 ½ tablespoons finely grated parmesan

2 teaspoons finely grated lemon rind

2 tablespoons coarsely chopped dill

4 wholegrain tortillas or wraps

Method:

  1. Heat oil in a large non-stick frying pan over medium heat; cook onion, garlic, and spinach, stirring for 2 minutes or until softened. Transfer to a large bowl and cool slightly. 
  2. Add egg, fetta, parmesan, lemon rind and dill to spinach mixture, then season with pepper; mix well to combine. 
  3. Divide filling mixture between 2 tortillas, spreading to cover: sandwich together with remaining tortillas. If using large wraps, divide mixture between 4 wraps and fold in half.
  4. Preheat a sandwich press. Toast gozleme, one at a time, in hot sandwich press for 3 minutes or until cooked through and golden. Cut gozlemes into wedges. 

 

Gozlemes can be made up to the end of step 3 the night before or in the morning, store in an airtight container in the fridge. Serve wedges with baby cos, an apple or tzatziki. We used Simpson's Pantry large low carb garlic and herb wraps that have a 5 star health rating.
