Banana Choc Muffins:                      

 Ingredients                                                                           

1 ripe banana                                                               

1 ½ cups Self Raising flour                                 

2/3 cup sugar                                               

½ cup choc bits

1 egg 

2/3 cup milk 

¼ cup oil                                                                                                                                                                                       

What to do: 

Instructions   

  1. Pre-heat oven to 180 C. Spray muffin trays or prepare patty pans.
  2.  Peel a banana and use a fork to mash the banana onto a plate. 
  3. Sift flour into the bowl then add sugar and choc bits.
  4. Crack the egg into a jug, add oil and milk. Add mashed banana and stir all together. Add wet ingredients to dry. Bring together but don’t overmix.
  5. Spoon or pour mixture into patty pans. Bake muffins for 20 minutes or until golden. Cool slightly before removing from tray. Serve warm.

 

Pumpkin Sultana Cake: 

Students and staff tried the pumpkin from the kitchen garden in a delicious cake. This recipe is easy to make. You evenly cut up and boil pumpkin pieces then mash to add to the cake recipe. If you prefer mixed dried fruit add that instead of sultanas.                                    Ingredients

1 cup cold, mashed pumpkin

1 cup caster sugar

½ teaspoon vanilla essence

3 tablespoons light oil

1 cup sultanas

2 cups self-raising flour

¾ cup milk

Method:

  1. Mix mashed pumpkin and sugar well.
  2. Mix in vanilla, oil, and sultanas.
  3. Add sifted flour and milk alternatively and mix again.
  4. Place in a 20 cm tin greased and lined with baking paper.
  5. Bake in moderate 180 C for 40 – 45 minutes or until cooked when tested with a skewer.
