 Recipe: Lunchbox Banana bread 

  

This recipe is an opportunity to learn how make a healthy snack using bananas and berries. Food skills involve measuring dry ingredients, mixing wet ingredients, mashing bananas, and folding in fruit.

 

Ingredients:                                                                       Equipment:                                

1 ½ cups self-raising flour                                            small mini loaf pans 

½ cup whole meal self-raising flour                           sifter, whisk, jug, and fork 

¼ teaspoon bicarbonate of soda                                 large bowl

½ cup castor sugar   

2 eggs (or substitute)                                                                                                                                                                                                                   

1/3 cup light-flavoured extra virgin olive oil                           

½ cup buttermilk (or dairy free)

2 teaspoon vanilla extract

2 large bananas, mashed (to make 1 cup)

1 cup frozen mixed berries (or fruit of your choice)

 

What to do:     Instructions 

 

 Preheat oven to 170 C. Grease a mini loaf pan. Line bases and long sides with baking          paper. 

 

  Place the flours, bicarb of soda and sugar in a large bowl. Whisk to combine. Make a             well. Whisk the eggs, oil, buttermilk and vanilla in a jug. Add to well with banana.                 Stir until just combined. Fold in ¾ cup berries. Divide mixture evenly among                           prepared pans. Top with remaining berries.

 

   Bake for 20 to 25 minutes or until golden and just firm to touch. Stand in pan for 5                minutes. Transfer to a wire rack to cool completely. Serve or store in an airtight                      container for up to 3 days.
