FRUIT SCONE SCROLLS       

Ingredients                                                                         Equipment                                  

3 cups plain flour                                                      baking trays, cup and spoon measurements

¼ cup caster sugar                                                  wooden board, knife               

1 teaspoon salt                                                   

1 tablespoon baking powder                                               

125g butter cut into small cubes                                                                                                                                                                       

1 cup milk    1 level teaspoon all spice or cinnamon                   

1 cup dried fruit (sultanas, apple and apricot)

What to do:     Instructions   

  1.  Preheat oven to 180 degrees Celsuis.   Place flour, sugar, salt and baking powder into a bowl. Mix together.

 

      2.   Rub butter in flour mix so that the mixture looks like breadcrumbs. There should be                no large lumps of butter.

 

 

      3.   Add the milk to form a soft dough. Allow dough to rest for 10 minutes in a warm                     place. 

 

     4.    Lightly flour a clean bench. Roll dough out into a rectangle 10cm x 20cm. Spread                    and press down the dried fruit evenly over the dough. Roll the dough up so that it                  resembles a rolled – up towel. Cut the rolled-up dough into 16 even pieces. Place                  cut side up on a lightly greased oven tray. Bake at 200 C for 15-18 minutes. Serve                    fruit scone roll buttered.
