FRUIT PIZZA

This week our seniors practiced their cutting skills to prepare fruit for a pizza. They were successful with the way they arranged the fruit, as it looked like a pizza.

If you want to encourage children to eat more fruit or try different fruit, why not try making a fruit pizza. You can prepare the main fruit for the base and children can help prepare or assemble the rest of the fruit topping. You can use any fruit as a ‘pizza topping,’ although fruit that browns when cut, such as apples, pears and bananas should not be used unless served straight away. Assemble and serve in a decorated pizza box. Can made up to 3 hours ahead; cover and store in the fridge until ready to serve.

Ingredients

2x 16cm round slices rockmelon, cut 1 cm thick, peeled.

2x 14cm round slices seedless watermelon, cut 1 cm thick, peeled.

4 or more strawberries, hulled, sliced crossways.

1 kiwi fruit, peeled, sliced, cut into small wedges.

14 blueberries

50g pieces fresh pineapple, peeled, cut into thin matchsticks or pieces or canned pineapple.

Procedure:

1. Discard seeds from the centre of rockmelon slices. Position each slice on a cake board.

2. Place rockmelon slices on top of watermelon slices. Top with strawberries, kiwifruit,

blueberries, and finally the pineapple pieces to resemble pizza cheese.

3. Cut fruit pizza into six wedges each and serve.
