CHORIZO CARBONARA

This week senior students enjoyed preparing the pasta and ingredients to make this recipe. They learned how to make a sauce using cream, eggs, and parmesan cheese. You can use gluten free pasta and lactose free cream and cheese to cater for those with allergies. 

Ingredients: 

375g curly fettuccine

2 chorizo sausages finely chopped.

1 ¼ (150g) frozen peas thawed.

1 cup light thickened cream.

2 eggs lightly whisked.

4 egg yolks

1/3 (25g) finely grated parmesan cheese 

Instructions how to make:

  1. Cook the pasta in a large saucepan of boiling water following the packet directions until al dente. Drain well. 
  2. Heat a large frypan over medium- high heat. Add the chorizo and cook, stirring, for 5 minutes or until golden. 
  3. Add the peas to the chorizo in the pan. Cook for 2 minutes or until heated through. Reduce heat to low. Add the pasta and stir to combine. Season.
  4. Whisk cream, egg, egg yolks and half the parmesan in a bowl. Pour over the pasta mixture and cook, tossing, for 1 -2 minutes or until sauce thickens slightly. Divide the pasta mixture among serving bowls. Sprinkle with the remaining parmesan to serve. Amount serves 4. 

 

 

SUPER EASY AND QUICK PIZZA BASE USING JUST PLAIN YOGHURT AND SELF-RAISING FLOUR

If you have plain yoghurt and self-raising flour you can make an easy and quick pizza base. Our Upper Juniors made individual or small group pizza using these ingredients for their pizza bases. They used the back of a spoon to apply pizza sauce then added their favourite toppings such as ham, salami, grated carrot, capsicum, olives, and broccoli. Students picked broccoli and parsley from the kitchen garden to add to their pizzas. Small pizzas took fifteen to twenty minutes and larger ones up to twenty-five minutes. You can add any combination of herbs, vegetables, meat or fish and cheeses. I use Feta cheese with roasted pumpkin or beetroot. Have you tried potato, rosemary, and garlic? 

Cheesy Garlic Pizza               

Ingredients                                                                              

200ml tub plain Greek yoghurt                                             

1 cup self-raising flour                                                             

2 cloves crushed garlic or 1 teaspoon paste.                            

Oil 

Grated parmesan, tasty cheese 

Italian herbs

                                                                                                                                                                           

What to do: 

Instructions   

  1. Preheat oven to 200 C. Spray tray or use baking paper.
  2. In a large bowl, mix yoghurt and flour together and knead on lightly floured surface.
  3. Roll out onto tray. Dock the pizza with a fork to stop it from rising in the middle.
  4. Mix crushed garlic with oil and spread over pizza base. 
  5. Grate both cheeses over the top and sprinkle with Italian herbs.
  6. Cook in 200c oven for 10 minutes.

 

 

Electric Frying Pan Pizza

Ingredients (what we need):

Pizza Base

  • 1 cup self-raising flour 
  • 1 cup plain Greek yoghurt. 

Toppings

  • Tomato or pizza paste.
  • 1 ½ cups mozzarella cheese 
  • Ham or salami
  • ½ onion or 2 spring onions - finely sliced
  • Capsicum
  • Pineapple 

 

You will need an electric frying pan, a chopping board, and an egg lifter.

Method (what we do):

  1. Measure flour and yoghurt and mix in a bowl.

 

  1. Place onto floured board.

 

  1. Knead and add a little more flour until the dough is not sticky.

 

  1. Press the dough into the frying pan and 1 cm up the sides of the pan.

 

  1. Turn the pan on to 7 or 8.  Let the pizza dough cook for 5 minutes. 

 

  1. Spread tomato paste onto the dough with the back of a spoon. Be careful of the hot pan.

 

  1. Sprinkle ½ cup of grated cheese over dough.

 

  1. Sprinkle on the rest of the fillings.

 

  1. Last thing to do is to top the pizza with one cup of cheese.

 

  1.  Put lid on and turn frying pan to number 6. 

 

  1. Cook for 15 minutes or until golden brown on the bottom.

 

  1. Cut into slices and enjoy. 

 

 

 

 

 

 

 

 

Upper Juniors learned about the five food groups by watching Sci Show Kids Fabulous Food Groups video. They created their own meal and compared it with the healthy food plate. Some students scaled down on protein or grains and some added more vegetable and fruit or included some dairy. Most students realised that the biggest food group was the Vegetable group.
