CHRISTMAS CAKE

Senior cafe group  learned how to prepare ingredients to make  Christmas cakes. They took their time to prepare the tins, measure, and mix ingredients and spread the mixture evenly in the tins. The next session they will follow the video instructions to cover their cakes with Royal icing. Then the following week, students will decorate their cakes and take them home. The cakes will keep well for the Christmas table as long as they are kept in an airtight container. 

 

Ingredients: 

1.05 kg mixed fruit, chopped

1 cup oil

1 ½ cups brown sugar, firmly packed

3/4 cup golden syrup

3/4 cups verjuice 

4 eggs, lightly beaten

2 cups of plain flour 

3/4 level teaspoons baking powder

3 teaspoons mixed spice

Method:

  1. Place verjuice, golden syrup and oil in a saucepan and heat until just boiling. Remove from the heat and add dried fruit and stand for one hour. 
  2. Preheat oven to 150 C. Grease and line tins with baking paper.
  3. Pour cooled fruit mixture into a large bowl, stir in the sugar and eggs. Mix well.
  4. Sift flour, baking powder and spice over fruit. Stir to combine. Spoon evenly into tins, smooth top.

  1. Bake in a slow oven 150 C for about one hour for small cakes, or two hours for a large cake until cooked. Check with a skewer. Allow to cool before removing tins. Store in airtight containers.
