Tropical Sunshine Lunchbox Bars

Students learned how to make a quick and easy snack bar. You can add any dried fruit that you like.       

Ingredients:

150g unsalted butter, plus extra for greasing

75g (1/2 cup) soft light brown sugar

200g condensed milk

250g porridge oats

75g (1/2 cup) desiccated coconut

100g dried apricots, finely chopped 

75g dried mango, chopped

 

Method:

  1. Line baking tin with foil, then grease the foil with some butter. Preheat the oven to 180C.
  2. Heat butter, sugar and condensed milk in a small saucepan until the sugar has dissolved and the mixture is runny. Remove from the heat and set aside. 
  3. Put oats, coconut, apricot and mango into a large mixing bowl and stir to combine. Pour sugar and butter mixture over dry ingredients and stir with a wooden spoon.
  4. Pour mixture into prepared tin. Use the back of a spoon or spatula to spread it out and make it smooth and even. Bake for 15-20 minutes, until golden. Then leave in the tin for about 10 minutes. Then cut it into bars. Allow to cool completely before eating. 

Storage: Keep in an airtight container for up to 7 days.
