POTATO BOSTON BUN                            

This week our senior elective students learned how to make a fruit bun. This is an easy recipe that doesn't require yeast. Using vegetable mash like potato or pumpkin adds moisture to the mixture. This recipe also works with Gluten Free self-raising flour. It forms a dense tea loaf.  Use your favourite dry fruit mix. Bake and enjoy a slice served warm with a spread of butter.

 

 

Ingredients:

1 cup mashed potato

1 cup mixed fruit or fruit medley

¾ cup sugar

2 cups self-raising flour

1 cup milk

1 teaspoon nutmeg or cinnamon

Method:

  1. Preheat oven to 180C.
  2. Beat mashed potato and sugar until light and fluffy.
  3. Fold in fruit. Add sifted flour and milk alternatively. The mixture should resemble whipped cream. 
  4. Place in two well-greased 18cm tins and bake for 30 minutes in the oven or 12 minutes in the microwave in an elevated position.
