PANCAKE DAY (Shrove Tuesday)

Buttermilk Pancakes                                        

Ingredients                                                                    

2 cups self-raising flour                                            

1 teaspoon baking powder                                      

1/3 cup caster sugar                                                  

1 egg ( or egg replacement if required)

1 3/4 cups buttermilk 

(or Lactose free alternative if required)

75 g butter, melted

 

Instructions 

  1. Sift the flour and baking powder into a large bowl. Add the sugar and mix. 

 

2. Whisk together the egg, buttermilk and butter until combined. Add to the flour and sugar mixture and whisk until smooth and the consistency of pouring cream. If too thick add a little more milk.

 

3. Heat a non-stick frying pan over medium –low heat. Pour the mixture into the pan and cook until bubbles appear on the surface.

4. Turn the pancake and cook for 1 minute or until that side is puffed and golden. Repeat with remaining pancake mixture. Put on a plate. Add your favourite topping e.g.  jam, sugar and lemon juice or maple syrup and ice cream.

   

         

We also used alternative pancake mix and added Lactose free milk for two of our students.
