What lunchbox snack can you make for someone who loves vegemite?
Answer: CHEESYMITE SCROLLS
Our Senior Elective group learned how to make an easy snack using vegemite. One group followed this recipe and the other used Gluten free flour and vegemite to cater for a student with allergies. Students found out the differences between the green and blue labels on a vegemite jar. Green indicates Gluten Free, and blue indicates salt reduced. Some students that did not like vegemite enjoyed it with cheese. You can also try vegemite with avocado.
CHEESYMITE SCROLLS
INGREDIENTS
2 cups self-raising flour
30g butter, chopped
¾ cup grated cheddar
1 cup milk
1-2 tablespoons vegemite, or to taste
Method:
Preheat oven to 180C. Lightly grease an oven tray.
Sift flour into a large bowl. Using fingertips, rub in butter until the mixture looks like breadcrumbs. Stir in ¼ cup of the cheddar. Make a well in the centre of the flour mixture. Pour in milk. Use a butter knife to quickly mix to form a soft, sticky dough.
Turn dough out onto lightly floured work surface and knead gently. Press out into a rectangle, about 5mm thick.
Using a spatula or the back of a spoon, spread vegemite all over dough, right up to the edges, then scatter over remaining cheddar. From a long side, roll up into a log. Cut into 16 x 1.5 cm thick slices. Tip: Try pressing out the dough on top of baking paper, then use the paper to help you roll it up.
