Upper Juniors enjoyed making a comfort food treat this winter, sticky date pudding. They did a great job preparing ingredients and making the sauce to go on top of the pudding.
Sticky date pudding can be prepared in muffin trays for quick cooking and proportion size.
Ingredients sauce
pudding 1 cup brown sugar
250 g dates 50 g butter
1 cup water 1 cup cream
100 g butter
2 teaspoons mixed spice
1 teaspoon bi-carbonate of soda
3/4 cup sugar
2 eggs
1 1/2 cups self-raising flour
Instructions
In a saucepan combine dates, water, butter, mixed spice, bi-carb soda and sugar. Boil the ingredients together for a few minutes, let the mixture cool down.
Add eggs and self-raising flour to the mixture. Mix everything together, and then put into greased muffin trays. You can put mixture into a jug to half fill holes easily. Cook in medium oven (180 c) for about 20 minutes.
To make sauce: Mix brown sugar, butter and cream in a saucepan and boil for 5 minutes. Serve topped with vanilla ice cream and enjoy.
