This week Upper Juniors enjoyed making a biscuit dough with lovely Hot Cross Bun spices to make these biscuits. We used allspice that has a blend of different spices like nutmeg, cinnamon, cloves, and pepper. Students took turns to measure ingredients, use an electric mixer safely, roll out biscuit dough and pipe on the crosses using icing. 

 

         HOT CROSS BUN COOKIES                   

Ingredients                                                                            

1 ¾ cups plain flour                                                     

1 teaspoon each of baking powder and                   

 bicarb of soda                                                                 

¾ cup brown sugar                                             

½ cup caster sugar                                                       

1 tablespoon allspice                                     

½ cup each dark choc bits and currants               

1 egg                                                                                 

150g butter, softened.

100g white chocolate melted, or small amount of plain icing to decorate. 

Method:

1.Preheat oven to 180C (160C fan forced). Grease and line 2 baking trays.

 

2. In a large bowl, sift in the plain flour, baking powder and bicarb soda. Stir in sugars, allspice, choc bits and currants. Combine well. 

 

3. In another bowl add the egg and butter. Using an electric mixer, beat until combined. Add to dry ingredients and mix with a wooden spoon.

 

4. Roll heaped tablespoons of mixture into balls and flatten slightly. Space apart on the trays. Place baking trays in oven and bake for 12-15 minutes or until golden but still soft. Remove and allow to cool on trays.

 

5. Once cool, fill a small snap- lock bag with melted chocolate and snip the corner. Pipe a cross on each biscuit. Otherwise make up plain icing. Allow to set before serving.
