Chow Mein:

 

 

 

 

 

 

 

 

 

 

 

Senior students did a great job preparing ingredients to make Chow Mein. They took time to slice and finely cut ingredients and add them at different stages of the cooking. 

 

Ingredients:

 

500 g beef minced steak, 1 large onion, chopped, ½ cup uncooked rice, 1 carrot, sliced or grated, 4 stalks celery, sliced, 3 cups water, ¼ cabbage or 12 Brussel sprouts, cut finely, 2 teaspoons salt, 1 teaspoon curry powder, pepper, 1 packet chicken noodle soup, 1 tablespoon oil

 

Method:

  1. Sauté onions and rice in oil. Add mince and cook until meat changes colour. 
  2. Add salt and pepper, curry powder, water, carrot and celery. Cook for about 20 minutes, or just until carrots are still a bit firm. Add chicken noodle soup and cabbage, then cook for a further 7 minutes. (Serves 4) 

 

Chicken Schnitzels:

 

 

 

 

 

 

 

 

 

 

 

 

 

Upper junior students learnt the method of crumbing chicken to make Chicken Schnitzels. 

 

Ingredients:

 

1 chicken fillet, halved horizontally, pounded to 1 cm thick

½ cup seasoned plain flour  

1 teaspoon mixed herbs

1 egg, lightly beaten

1 ½ cups dried breadcrumbs

Oil for shallow frying 

 

Method:

 

Cut chicken into 6 pieces. Prepare 3 bowls one for flour, one for egg and one for breadcrumbs. 

  1. Coat in flour, shaking off excess. Dip into egg, then into crumbs, pressing firmly. Chill 15 minutes. 
  2. Heat oil in a large frying pan on medium. Cook chicken in two batches, 2-3 minutes each side, until golden. Drain on paper towel. Cool slightly before slicing.
