Chow Mein:
Senior students did a great job preparing ingredients to make Chow Mein. They took time to slice and finely cut ingredients and add them at different stages of the cooking.
Ingredients:
500 g beef minced steak, 1 large onion, chopped, ½ cup uncooked rice, 1 carrot, sliced or grated, 4 stalks celery, sliced, 3 cups water, ¼ cabbage or 12 Brussel sprouts, cut finely, 2 teaspoons salt, 1 teaspoon curry powder, pepper, 1 packet chicken noodle soup, 1 tablespoon oil
Method:
- Sauté onions and rice in oil. Add mince and cook until meat changes colour.
- Add salt and pepper, curry powder, water, carrot and celery. Cook for about 20 minutes, or just until carrots are still a bit firm. Add chicken noodle soup and cabbage, then cook for a further 7 minutes. (Serves 4)
Chicken Schnitzels:
Upper junior students learnt the method of crumbing chicken to make Chicken Schnitzels.
Ingredients:
1 chicken fillet, halved horizontally, pounded to 1 cm thick
½ cup seasoned plain flour
1 teaspoon mixed herbs
1 egg, lightly beaten
1 ½ cups dried breadcrumbs
Oil for shallow frying
Method:
Cut chicken into 6 pieces. Prepare 3 bowls one for flour, one for egg and one for breadcrumbs.
- Coat in flour, shaking off excess. Dip into egg, then into crumbs, pressing firmly. Chill 15 minutes.
- Heat oil in a large frying pan on medium. Cook chicken in two batches, 2-3 minutes each side, until golden. Drain on paper towel. Cool slightly before slicing.
