JAFFA CAKES

Jaffa is the combination of chocolate and orange flavours. Senior students enjoyed making Jaffa cupcakes but if you have time you can make a large Jaffa cake. 

Ingredients:

2 cups plain flour

1 cup sugar

1 teaspoon baking powder

125g softened butter

2 eggs

2 teaspoons of orange zest (or orange essence)

Juice of half an orange

1 cup chocolate melts

¾ cup milk

cocoa and icing sugar for chocolate icing

Method: 

  1. Preheat oven 180C. Cream butter and sugar then add eggs and essence. Mix well. Add orange zest
  2. Add sifted flour, baking powder, orange juice and milk. Beat with wooden spoon until smooth. 
  3.  Place patty pans in muffin tins. Put mixture into each pan, filling three quarters full and bake for 15 to 20 minutes until cakes spring back when lightly touched. Ice small cakes with chocolate icing.          Makes 24

OR pour into baking paper lines 20cm square tin. Bake for 45 to 50 minutes until cake springs back when lightly touched. Ice with chocolate icing.
