SHOVE TUESDAY PANCAKE DAY

Challenge: We have a sandwich press and want to know if we can make crepes. Yes, you can. Tip: Ensure the sandwich press is level before adding the batter, otherwise it will slide off to one side and not form a circle. Some students tried this recipe using Gluten Free plain flour. If you don’t have a sandwich press you can use a frypan.

 

 

 CREPE RECIPE 

1½ cup plain flour

2 tablespoons caster sugar

2 eggs

1 cup milk Cooking oil spray Sliced strawberries, blueberries and maple syrup

 

Method:

1.  Place flour and sugar in a medium bowl, stir to combine. Beat eggs and milk together in a large jug until combined.

 2. Make a well in the centre of the flour mixture; slowly add the egg mixture, whisking until a smooth batter forms. Strain mixture through a sieve back into the jug. Cover and stand for 30 minutes.

 3. Preheat a sandwich press. Lightly spray the top and bottom with cooking oil spray. Pour ¼ cup of batter onto the centre of the sandwich press. Working quickly, use the base of a measuring cup to spread the batter into an 18cm thin circle. 

4.  Cook for 1 minute before closing the lid, then cook for a further 30 seconds or until lightly browned on both sides. Using an egg flip, carefully transfer the crepe to a plate; cover to keep warm. Repeat cooking with remining batter, lightly spraying the press with cooking oil spray in between batches, to make eight crepes.

 5.  Fold crepes into triangles. Top with berries, drizzle maple syrup to serve.        Challenge: Run out of flour and want to make pancakesSome of our senior students tried this recipe to show them that they could. This recipe is nutritious and covers four of the five food groups. It is a low carb recipe for someone who is diabetic.

 

PANCAKE RECIPE 

2 Ingredients

1 ripe banana

1 cup of oats½ 

cup of milk

1 egg

1 tablespoon maple syrup10g cooking oil canola or other 

 

Method

1.    Blitz ingredients in a blender or food processor until smooth

2.    Drizzle oil in a frypan. Cook and flip until golden brown.
