Ingredients:
100g butter, softened
1/3 cup caster sugar
1 egg yolk
½ teaspoon vanilla essence
100g (½ cup + 2 tablespoons) self-raising flour
25g (1/4 cup) cornflour
40g (1 cup) cornflakes, crushed
12 glace cherries, halved
What to do: Instructions:
- Preheat oven to 180 degrees celsuis. Cream butter and sugar together until pale and fluffy, then mix in the egg yolk and vanilla.
- Sift the flours into the bowl and mix well with a wooden spoon.
- Shape the mixture into 24 small balls and roll in the crushed cornflakes. Place on greased trays, well spaced to allow for spreading. Flatten slightly and press half a glace cherry into each one.
- Bake in the centre of the oven for 10-12 minutes until pale golden. Cool on a wire rack. Makes 24 biscuits
