Weekender biscuits 

Equipment:

Mixing Bowl

Ingredients:  

100g butter, softened                                         

1/3 cup caster sugar                                                   

1 egg yolk                                                             

½ teaspoon vanilla essence                           

100g (½ cup + 2 tablespoons) self-raising flour

25g (1/4 cup) cornflour

40g (1 cup) cornflakes, crushed

12 glace cherries, halved

 

What to do:   Instructions:

  1. Preheat oven to 180 degrees celsuis. Cream butter and sugar together until pale and fluffy, then mix in the egg yolk and vanilla.
  2. Sift the flours into the bowl and mix well with a wooden spoon.
  3. Shape the mixture into 24 small balls and roll in the crushed cornflakes. Place on greased trays, well spaced to allow for spreading. Flatten slightly and press half a glace cherry into each one. 
  4. Bake in the centre of the oven for 10-12 minutes until pale golden. Cool on a wire rack.   Makes 24 biscuits
