Apple Pie Mug Cake 

This week, Upper Junior students discovered how easy it is to make a dessert using the microwave. They prepared the apple by peeling the skin, carefully coring out the apple core and cutting up the apple in quarters ready to dice. Students remembered to use oven mitts or a cloth to safely remove their mug from the microwave to the bench top. They turned the dessert out into a bowl to cool down then added yoghurt or plain ice cream to serve. 

Ingredients (what you need):

  • 1/2 green apple, peeled and diced
  • cinnamon, to taste
  • 1 teaspoon vanilla extract
  • 1 tablespoon honey
  • 3 tablespoons self-raising wholemeal flour
  • 3 tablespoons milk 
  • natural yoghurt and honey, to serve

Method (what to do):

  1. Put the diced apple in a mug and microwave until soft, about a minute. 
  2. Add all the rest of the ingredients (except the yoghurt and extra honey) and mix. If you need to add a little more milk for a nice batter, add a touch more.
  3. Cook for 2 minutes in the microwave.  Use a knife to carefully score the edges of the the mug cake and tip out into a bowl. Top with yoghurt or plain ice cream, extra honey and a shake of cinnamon to taste.
