Our Seniors will be sharing a recipe with you, that they use in their cafe, so that you can recreate it at home!

Mixed Berry Muffins

Prep + cook time: 30 minutes l Makes: 12

 

Ingredients

2 1/2 cups (375g) self-raising flour

100g butter, chopped coarsely

1 cup (22g) caster sugar

1 1/4 cups (310ml) buttermilk

1 egg, beaten lightly

1 1/3 cups (200g) frozen mixed berries

 

tips: This recipe works well with any frozen or fresh berries.

 

Method

  1. Preheat oven to 200c. Line a 12-hole muffin pan with paper cases.
  2. Sift flour into a large bowl; rub in butter. Stir in sugar, buttermilk and egg. Do not over-mix; mixture should be lumpy. Sir in berries. Spoon mixture into pan holes.
  3. Bake muffins about 20 minutes. Leave muffins in pan for 5 minutes before turning, top-side down onto a wire rack to cool.  Dust with sifted icing sugar, if you like.
