Toasties

Fig and goat cheese toasties

2 slices of sourdough or crusty white bread

2-3 tbsp of goat cheese, brie or cream cheese

1 tsp honey, agave or maple syrup

2 fresh or dried figs – can be substituted with dried  

   apricots, dates, or plums

Sprinkle of thyme, dried rosemary or chopped hazelnuts (optional)

 

Kirsty’s banana and double cheese toasties

2 slices wholemeal bread

1 very ripe banana sliced

4 slices mozzarella

2 slices aged cheddar 

 

Spinach, pear and gorgonzola cheese toasties

2 slices white bread

2 tbsp butter

4 slices gorgonzola

2 tbsp wilted spinach

4 slices fresh or dried pear

Method

  1. Assemble ingredients in the bread as an open or closed sandwich
  2. Grill in oven or sandwich maker until cheese melts.

Chocolate Chip Cookies

Ingredients (makes approximately 20)

1 ¼ c rolled oats – powderised

1 c sifted plain flour

¼ tsp salt

½ tsp bi carbonate soda

½ tsp baking powder

125g butter, melted

½ c white sugar

½ c raw sugar

1 egg, beaten

½ tsp  vanilla essence

175g milk, dark choc chips or a mixture of both (not melts)

 

Method

  1. You can make plain oats into a powder by using a blender.  Make sure that you make them into fine powder.
  2. If you do not have raw sugar, just use another ½ c of white sugar.
  3. You will need more than one baking tray, or cook them in batches.
  4. Preheat oven at 200°C.
  5. I have found that this is the best recipe for choc chip cookies.
  1. Into a large bowl add powderised rolled oats, sifted plain flour, salt, bi carb soda and baking powder. Mix them together.
  2. Add to the bowl melted butter, white sugar, raw sugar, beaten egg and vanilla essence. Mix all the ingredients together using a wooden spoon or an electric mixer for half a minute, add the choc chips and mix until a dough is formed.
  3. Roll the dough into about 20 even sized balls.
  4. Place them onto a lined baking tray.  You will need to place them 5cm apart from each other.
  5. Bake for 8 minutes at 200°C for chewy, slightly coloured cookies.  10-12 minutes at 200°C for crunchy, darker coloured cookies.
  6. Cool on a cake cooler for approximately 10 minutes before eating.

Cloth Masks

Erin Mc 9E’s  pen friend Anju in Japan sent this photo in March showing what her little sister Kaera made for her dolls. 

Here is how to make a cloth mask for people from the pattern recommended by the Australian Government Health Department – and there are others available on online. A piece of wire about 6cm like a bread tie sewn in the top seam – wide zig zag over – helps fit over the nose. Style with please at the sides uses less elastic but had thicker fabric to sew through.
