JOYEUSES PAQUES! HAPPY EASTER!

These jam biscuits are a favourite! You are sure to put a smile on your little ones face this Easter!

Les Biscuits à La Confiture

 

250g soft butter

3/4 cup caster sugar

1 tbsp vanilla sugar

2 eggs

1 small lemon rind grated 

2 1/2 cups self raising flour

1/2 cup custard powder

desiccated coconut to coat biscuits

your favourite thick jam ( I like to use strawberry or orange marmalade! )

soft icing to sprinkle to serve

Preheat oven 180C.

Use electric mixer to beat butter, sugars and lemon rind.

Add eggs.

Gradually add flour and custard powder.

 

Roll a tablespoon of mixture into a ball

Coat into the coconut mixture.

Place on tray lined with baking paper.

Indent your thumb in centre of each ball.

Spoon a little jam in each centre.

Bake for about 10min or until lightly coloured.

Set aside to cool.

Once cool, sprinkle soft icing.

Voilà!

 

Le Jardin des Herbes Français!

Have you noticed the French herb garden we planted late last year?

It is blooming in abundance! C'est merveilleux!

In the garden, you will notice, olives on the olive trees, bushes of parsley, sprigs of thyme, a rainbow of silverbeet and a trailing pumpkin patch. The cos lettuce keeps sprouting and it looks like our creepy crawly friends are enjoying the kale. Here are some staff picking a bunch or two for dinner.

He now lives in the BPS French Herb Garden.

Harry is the BPS Sustainable Scarecrow Art Competition Entrant at The Melbourne International Flower and Garden Show.
