Trend v's Taste

Unit 3 Food Studies, "On Trend Recipes"

During this outcome students have been investigating the role of the media in shaping food information and food choice, including the influence of marketing and advertising, news reportage, popular culture and social media.

They need to be able analyse the role of the media in shaping food information and influencing food choice.

Last week we re-created some food trends that have been popular on some social media platforms.

Jaelyn Brand

Recipe: TikTok Cloud Bread

I decided to re-create the TikTok Cloud Bread as I remember seeing the recipe many times online on TikTok, throughout lockdown in 2020. I was curious as to whether it would work or not. The meringue-like dessert was visually interesting and quite pretty, however, the taste wasn’t there. I think that it is more a meal for the aesthetic, and I would add a lot more sugar and possibly some vanilla essence to counteract the eggy flavour.

Cloud Bread Recipe

3 ingredient fluffy TikTok viral cloud bread

Prep Time 10 mins

Cook Time 20 mins

Total Time 30 mins

Ingredients-

  • 3 large egg whites about 6 tbsp
  • 2.5 tbsp sugar ~ 30g
  • 1 tbsp corn starch ~10g
  • food colouring optional, see note

Instructions-

  • Heat the oven to 300°F. In the bowl of a stand mixer, use the whip attachment to whip the egg whites on medium high until frothy.
  • Add the sugar slowly, 1 tablespoon at time and whip on high until small bubbles start to form.
  • Sift in the corn starch and continue to whip on high until the whites are whipped up into a glossy thick meringue that holds a peak, about 5-6 minutes.
  • Scoop out the meringue on to parchment paper lined baking tray and shape into a fluffy cloud or mound.
  • Bake for 20-25 minutes. The outside will be a light golden brown. Allow to cool and enjoy the fluff.

Notes-

Optional: If you want to add flavouring (baking extracts) or colour into your cloud bread, add it in when you add your corn starch.  Recipe via @linqanaaa and @abimhn

Sophie Cook

Recipe: Tiktok Spicy Pasta

I decided to recreate this dish as it has been very popular all over social media and it really caught my eye. The trend started on Gigi Hadid’s Instagram story then was shared across Tiktok my millions of people. In my honest opinion, I think the recipe has been hyped up too much and it isn’t restaurant worthy, it is a good easy pasta meal to make at home but it isn’t mind blowing.

Jack Peacock

Recipe: KFC Style Fried Chicken

I decided to recreate this recipe because I like chicken and fried chicken is my favourite. I also picked it as it’s an on-trend recipe because fast food and fried chicken are very popular. I got this recipe from a website that shows the KFC recipe and I modified it slightly.
