Kilvington Cares
Each week, our team of wonderful Kilvington Cares cooks provide delicious meals for members of our School community. These dinners vary from week to week, and include items such as hearty chicken and leek pies, zingy chilli con carne, and fragrant chicken and vegetable sesame noodle stir-fry.
While all these meals are different, what remains the same is the desire to help and support those in need in some small way.
In this edition of ITK, our Kilvington Cares team share a recipe for one-pot harissa chicken – a yummy and easy-to-make low fat casserole that is packed with vegetables and flavour.
ONE-POT HARISSA CHICKEN RECIPE
Prep: 5 mins
Cook: 25 mins
Serves: 4
Ingredients
- 4 skinless chicken breasts
- 1 tsp ground cumin
- 1 tbsp olive oil
- 1 onion, finely sliced
- 400g can cherry tomato
- 2 tbsp harissa paste
- 1 tbsp honey
- 2 medium zucchinis, thickly sliced
- 400g can chickpea, drained and rinsed
Method
- Season the chicken breasts all over with the cumin and lots of ground black pepper. Heat the oil in a large non-stick frying pan and cook the chicken with the onion for 4 mins. Turn the chicken over and cook for a further 3 mins. Stir the onions around the chicken regularly as they cook.
- Tip the tomatoes and 250ml water into the pan and stir in the harissa, honey, courgettes and chickpeas. Bring to a gentle simmer and cook for 15 mins until the chicken is tender and the sauce has thickened slightly.
- Serve with couscous and a green salad. Enjoy!
If you know of an individual or family who could benefit from a meal, please get in touch with your CSR, Community Relations Officer, Bianca Lapins at lapinsb@kilvington.vic.edu.au or Nadine Power at npower1616@gmail.com.
