Design and Technologies 

Hello from the Food Technology department of Kilbreda College! Many exciting activities, demonstrations and delicious treats have been cooking in our area of the school.

While our current period of remote learning may not have seen our classes cooking together at the College, many virtual practical lessons took place in Year 8 and 9 Food Technology, Year 9 Café Culture and Year 10 Food Technology. Delicious foods, such as cheesy muffins, wontons and choc-chip loaded cookies  were baked, pancakes were flipped and food styling was all demonstrated from school through to the kitchens at home. Our budding chefs enjoyed this along with the very supportive families in the College community.

 

In Term 1 and early Term 2, we also were very fortunate to be visited by Ken and Chef Tom from Le Cordon Bleu Melbourne. With the Year 12 VCE Food Studies students and both classes of Year 9 Café Culture students, they shared and demonstrated many functional properties of food and cooking and taught them how using vegan ingredients can be delicious! It was such a fantastic experience for both the teachers and students, and thoroughly enjoyed by all!

Earlier in the year College staff were shown a nostalgic presentation that walked us through the history of Kilbreda College. From that presentation we were told the 'truth' that the location that currently houses the Food Technology area was previously named 'Bacon House'! How fitting is that!!

 

So as I sign off from the Kilbreda Kitchens of 'Bacon House' I will leave you with some anecdotes from our lovely Year 9 and 12 chefs. We are very proud of the students who commit themselves to their Food Studies and continue to encourage them to make moorish, delicious dishes both at the College and at home.

Student Reflections 

On Tuesday 23 March, the Year 12 Food Studies class was lucky enough to have Le Cordon Bleu visit the College for an incursion. Chef Tom took us through the steps of cooking a crème brule, with an Australian twist. Tom’s technique was incredible to learn from. He took us through techniques that are not only relevant to everyday cooking but the Year 12 course. We were able to witness first-hand the dextrinization of the chocolate biscuit, the coagulation of the custard and the caramelisation of the sugar of the Crème Brule. 

 

The demonstration was able to reinforce the skills we had been learning about in the classroom and apply them to real life situations. After the demonstration we were given the opportunity to taste the crème brulees. They were absolutely amazing! 

 

Our whole class would like to give a big thanks to Tom and the Le Cordon Bleu team for visiting our College and providing us with the opportunity to learn from a professional chef and, of course, thanks to Ms Stevens who provided us with this amazing opportunity. 

 

Year 12 Food Studies class 

 

This term in our Café Culture class, we have an assignment where we create our own café or food truck. To give us inspiration with our menus, we had Chef Tom from Le Cordon Bleu Melbourne give us a demonstration on how to make jackfruit sliders. It was yum!

Year 9

 

Chef Tom’s demonstration of making jackfruit sliders was informative, fun, interesting and very beneficial. I learnt lots of knife skills such as going slow and precise until you get more comfortable to go faster and that practice makes perfect. He also gave us tips and tricks for cooking jackfruit and getting the perfect sauce with lots of flavour. He also taught us how to construct the sliders and the best way to layer our toppings. This really helped me when I made my own jackfruit slider as I remembered his advice and it made it look amazing. 

 

Chef Tom had so many stories from his experiences at Le Cordon Bleu Melbourne and gave us some awesome advice if we wanted to pursue cooking as a career. It really inspired me to consider cooking as my career and spend more time cooking and practising my skills to be just like him. 

 

Overall it was an incredible experience and I loved every second of his demonstration and I hope he comes back to do another one.

I really enjoyed watching Chef Tom cook as it was really cool to see a professional Chef cooking up a meal that is quite foreign as I’ve never seen someone cook jackfruit before! It was a super cool experience and gave me a new look on how a fruit could be a substitute for meat!
