This week in the kitchen:

Broccoli Slaw

Ingredients

  • 2 heads of broccoli (use the entire broccoli)
  • 1/2 red onion
  • 1 red apple
  • 1/2 cup of raisins
  • 1/2 cup of sunflower seeds
  • 2 tablespoons of olive oil
  • 2 tablespoons of lemon juice
  • 1/2 teaspoon of salt
  • Pepper to taste
  • 1 cup of yoghurt

 

Method

  • Separate the broccoli into long florets. Finely slice the stems, and cut the florets.
  • Finely chop the onion.
  • Dice the apple into small pieces.
  • Place a small frying pan on a medium heat, add the sunflower seeds and toast, while stirring.
  • In a large bowl combine the broccoli, onion, apple, raisins and sunflower seeds. Drizzle with olive oil and lemon juice, sprinkle over the salt and pepper and toss lightly.
  • Add the yoghurt and mix until well coated.
  • Transfer to serving bowls.
