Recipe of the Month 

THIS easy recipe for folded breakfast quesadillas is the best fast food you can get, according to Mrs Leon Rogers. It's so good it can even be prepared the night before, ready for a quick and filling hot breakfast. Students reacted with excitement and awe (above) when told it can even be made into a dessert, switching out the veggies, salsa sauce and cheese for Nutella, strawberries and banana.

 

This recipe features eggs, avocado, spinach and mozzarella cheese, making it a delicious start to the day. The avocado is a must - "whether you like avocado or not!''. It's brain food and non-negotiable, Mrs Rogers says!

 

Each week as many as 400 students pass through our Food Room, creating both basic and extensive culinary masterpieces. This week alone, Year 8 students baked scones and Year 10 students made an Asian spring-onion pancake while the Year 9s assembled and cooked our Recipe of the Month (a new section in St Norbert News for 2023!). 

 

The trick to this tortilla and veggie-based breakfast recipe is in the folding, preventing the ingredients from falling out and making it easy to toast in a non-stick pan or sandwich presses. Full of goodness and energy! 

 

Folded Four Quarter Breakfast Quesadillas (for 3)

 

You'll Need:

3 large tortillas 

 

3 eggs

60 ml milk

1 cup fresh baby spinach

1 cup grated mozzarella cheese

½ ripe avocado, mashed

3 tablespoons taco sauce

 

Here's How: 

Break eggs into a medium sized bowl and whisk together with milk.  Add to a medium sized frying pan and scramble. Turn off the heat.

Lay your tortillas out on a large board. Make one cut in wrap from the centre to the outside. In one quarter place mashed avocado. In second quarter place baby spinach leaves. In third quarter place grated cheese. In fourth quarter place scrambled egg and top with taco sauce. 

Now the tricky part - how to fold it: Start by folding the wrap from the left side of your cut and flip and flip again until you have a completely folded tortilla .

Place into a preheated sandwich press or clean frying pan and fry on medium heat for 2 minutes each side until golden brown.
