Cross Country

On Wednesday 31st May, Pearl (Year 5) competed at the Maribyrnong Division Cross Country Championships. Pearl ran in the Under 11’s, 3km event and ended up placing fourth.

This was a fantastic opportunity for Pearl to compete against other students from other schools.

On behalf of the St. John’s community, we would like to congratulate Pearl for her sensational efforts.  We are extremely proud and we wish Pearl all the best as she has now qualified into regionals on Wednesday 19th June.

‘Embrace Kids’ Screening - Sun Theatre, Yarraville

Inform & Empower is also hosting a screening of ‘Embrace Kids’ at the Sun Theatre in the next school holidays. Embrace Kids is an uplifting film by 2023 Australian of the Year, Taryn Brumfitt. It brings together a vibrant collection of stories from young people and famous friends alike, who share their experiences about body image, bullying, gender identity, advocacy, representation and more.

This film aims to improve the body image of young people across Australia and the world. Aimed at an audience of 9-14 year olds, but equally engaging for adolescents, teachers, and parents, this film inspires, educates, and advocates for a world where we are not held back by the thoughts we have about the way we look. Instead, young people are encouraged to figure out what makes them unique and special, and use that to spark change.

Engaging with Place

This week at the farm the children harvested silverbeet and a little bit of rainbow chard that was used to make scrambled eggs.  For the children that had allergies or are vegetarian, an alternative of silverbeet and apple juice was offered.

I have included both recipes for you to try at home, we hope that you find these recipes as delicious as the children found them.

Scrambled Eggs with Silverbeet

Ingredients

1 Bunch of silverbeet or rainbow chard

Eggs

Splash of milk

Salt and pepper to taste

Unsalted butter

Method

  1. Wash and dry silverbeet / chard.
  2. Remove stems from the silverbeet / chard and keep the leaves.
  3. Roll the leaves and chop into small strips.
  4. Saute the leaves with butter in the pan until they are soft.
  5. Put the leaves aside while we prepare the eggs.
  6. Crack the eggs into a bowl with a splash of milk and a crack of salt and pepper.
  7. Whisk the eggs until they are together.
  8. Pour into the pan with the leaves and scramble bringing the sides of the mixture into the middle of the pan as they cook.

We hope you will enjoy this as a breakfast treat

Silverbeet and Apple Juice

(This recipe was used as an alternative for the children that had allergies / vegetarian)

1 chopped green apple

1 silverbeet leaf (stalk removed) chopped

Mint leaves

Method

Place all of the ingredients into a juicer or nutri bullet and juice or blend until the mixture is smooth.  For a colder drink cool the ingredients before juicing or add ice cubes before blending.
