Look after you

The most important thing we can do this school holiday period is to recharge our batteries. It is so important to ensure that we do use some of our holiday time constructively and productively but with the focus on ‘us’. Each and everyone must take time to breathe, relax and try to do something a little different, even though we are restricted in what we can do and where we can go.

 

So, some ideas I share with you are not original but maybe things you have not thought about before:

  • Get creative by making cards for family and friends.
  • Give your bedroom a make over. This could be as simple as rearranging furniture or giving it a coat of paint.
  • Email, write to or phone someone that you have not been in contact with for a while and aim of rekindling a relationship.
  • Perhaps create a veggie garden, now that the weather is warming up, you should see growth and be able to harvest in the next few months at the most. Tomatoes, herbs, beans, chili peppers, kale, lettuce, onions including spring, and radishes grow very well in pots.
  • Maybe a picnic in the park with physical distancing with a friend or household members is something to consider.
  • Try some different cooking. What would you like to cook but have never tried?  Perhaps make this a family activity. Our Year 7s cooked some Jam Drop Biscuits the feedback was very positive. This is a great recipe, quick and easy and a pleasing treat for all family members.

Here is the recipe for you to try if you like.

Jam Drops 

(Makes 12)

 

INGREDIENTS:

1 egg

½ cup caster sugar

75g butter

½ teaspoon vanilla

1 ¼ cups self-raising flour

2 tlb spoons of berry jam

 

METHOD:

  1. Pre-heat oven to 180℃
  2. Line tray with baking paper.
  3. Place butter in a saucepan and gently melt. Set aside to cool.
  4. Use a whisk to beat together the egg and sugar in a medium bowl until pale and fluffy. Add vanilla.
  5. Sift flour in large bowl.
  6. Add butter, egg, vanilla & sugar to the flour. Fold until well combined. You should have a stiff dough.
  7. Roll 1tbl of dough into a ball and place on a baking tray, leave some room for spreading.
  8. Flatten slightly and using ½ teaspoon measuring spoon, make a shallow hole and fill with ½ teaspoon of jam.
  9. Bake for 15 minutes until golden.
