Mini Frittata
Ingredients
10 sheets filo pastry
100g butter, melted
4 eggs, beaten
½ cup milk
½ cup grated tasty cheese
¼ red onion
8 black olives, chopped
8 semi-dried tomatoes, chopped
50g frozen spinach, defrosted
¼ tsp salt
¼ tsp pepper
4 lettuce leaves
1 tomato
¼ carrot
1/8th green capsicum
½ block feta cheese, dice
Method
1. Preheat oven to 180°C
2. Prepare muffin tin – spray with oil.
3. Brush each sheet of pastry with butter. Cut pastry into correct size according to tin size. Line tin with pastry.
4. Combine beaten eggs and milk.
5. Add all other ingredients and mix well. Spoon mixture evenly into muffin tins.
6. Bake in oven for 20-25 minutes or until filling is set.
