ZUCCHINI SLICE DAY

On Monday 6th March, a group of parent volunteers will be making zucchini slice for the children made from Holy Cross zucchini and eggs. See below the recipe and ingredients for your reference. 

 

Easy Zucchini Slice 

 

1 cup Tasty cheese – Grated 

3 small / med zucchini – Grated (about 2 cups)

3 rashers Bacon diced

1 onion diced

6 free range eggs

¼ cup Olive Oil

½ cup Rice Flour

1 teaspoon baking powder

Pinch of mineral salt and black Pepper

 

PREP STEPS 

  1. Combine onion and bacon in a small fry-pan and cook until translucent. 
  2. Whisk eggs in a bowl, then add all other ingredients in bowl and mix to combine 
  3. Pour into a greased/lined oven-proof dish 
  4. Bake in the oven at 200 degrees for 35 minutes or until golden brown on top
