Fudge Brownies (courtesy: Pearl Chow)

 

Equipment: 

Baking Pan 18cm x 18cm

 

Ingredients: 

Cocoa powder 15gm

Granulated Sugar 100gm

Brown sugar 50gm

Unsalted Butter 85gm

Bittersweet Dark chocolate 100gm

Salt 1/2 teaspoon

Vanilla extract 8gm

Eggs 2

All purpose flour 40gm

 

Instructions:

Preheat oven at 180oC

  1. Chop the chocolate into a small size
  2. Melt the butter and pour 60gm of the chopped chocolate into it and let it sit for 2 mins.
  3. Whisk until the chocolate is smooth and melted.
  4. Combine the eggs and sugar in a large bowl; beat until light and fluffy.
  5. Add salt and vanilla extract.
  6. Pour chocolate and butter mixture and whisk until smooth.
  7. Sift flour and cocoa powder and fold gently until combined.
  8. Add the remaining 40gm of chopped chocolate and mix well.
  9. Line the pan with parchment paper.
  10. Pour the batter and smooth with spatula.
  11. Bake at 180 oC for 20mins.

Cool in pan before slicing.
