Henry  made his own posh Italian restaurant - Amazing Italian - complete with candlelight, Italian music and a very knowledgeable waiter. He also made the bolognaise and salad.

MASTERCLASS

Hello everyone,

In the past couple of weeks my family and I have been cooking dinner with Atlas Masterclass. They deliver a box of food and each night you watch a video and follow the chef on Instagram to make dinner. Each week they do a different cuisine and so far we have had Peruvian and French. It is already mostly prepared and is fun to cook and serve. My favourite dish was chicken cassoulet in French week. The food is really good and I recommend you try it. Photos are of my chicken cassoulet and a Peruvian smoked cauliflower on quinoa. Next week is Thai week - yum!

CARROT CAKE BISCUITS

Favourite Recipe By: Otis Foundation A - seen playing outdoors with his younger sister

  • 1/4 cup(55 grams) rapadura sugar (or brown sugar)
  • 1½ cups (225 grams) wholemeal or plain flour
  • 1/4 teaspoon baking powder
  • 1/4 teaspoon bicarbonate of soda
  • 1/2 cup (45 grams) rolled oats
  • 1½ teaspoon cinnamon
  • 1/2 teaspoon mixed spice
  • 1 egg
  • 1 teaspoon vanilla bean paste (or extract)
  • 1/2 cup (150 grams) maple syrup
  • 1/3 cup (85 grams) coconut oil, melted and slightly cooled
  • 1 large carrot, grated (approx. 1 cup)
  1. Preheat oven to 160 degrees celsius (325 F).  Line 2 cookie trays with baking paper and set aside.
  2. Place the sugar, flour, baking powder, bicarb soda, oats, cinnamon and mixed spice into a large bowl and mix to combine.
  3. Add the egg, vanilla, maple syrup, coconut oil and carrot and mix to combine.
  4. Place heaped tablespoons of the mixture onto the prepared trays leaving room for the cookies to spread a little and gently flatten each cookie.
  5. Bake for 12-14 minutes or until golden.  Allow to cool for 5 or so minutes before placing the cookies onto a wire rack to cool completely. Enjoy!

Mr C’s Chocolatey Ferrero Rocher

Microwave Brownie Bowl

Ingredients

1/2 cup self-rising flour

1/2 cup white sugar

2 eggs, beaten

6 tablespoons cocoa powder

6 Ferrero Rocher (or any other milk chocolate)

6 tablespoons milk (or any other milk)

6 tablespoons vegetable oil (or any other oil)

Directions

- Mix dry ingredients in a large microwavable bowl

- Add wet ingredients and stir with a spoon

- Crush the Ferrero Rocher under a spoon and add them to the mix

- Stir until it is the same consistency as Nutella

- Place in microwave and heat for 5 minutes

- Let it cool for 5 minutes

- Serve on its own or with some cream, custard or ice-cream.

CORMAC'S CHOC CHIP COOKIES

 

MRS ROSE'S CHOCOLATE MACAROONS

Ingredients

  • 2 cups of dark chocolate chopped
  • 4 egg whites
  • 1 cup of caster sugar
  • 2 tsp vanilla
  • 1/2 tsp lemon juice
  • 1.5 cups of shredded coconut

Method

  • Melt chocolate and set aside
  • Preheat oven 170C and line baking trays
  • Beat eggs until white and foamy
  • Add a pinch of salt then beat until soft peaks form
  • Add one tables spoon one at a time, beating after each addition until stiff peaks (total 6mins)
  • Beat in vanilla and lemon juice
  • Fold in the coconut and melted chocolate
  • Drop heaped teaspoons of batter on baking trays
  • Bake for 10-13 mins
  • Cool and serve
