Weekly Recipes

Some of the recipes from this week's menu:

 

Crispy Parmesan Tomato Rice

  • 4 tablespoons of olive oil
  • 2 cloves of garlic
  • 1 onion
  • 1 carrot
  • 2 cups of cherry tomatoes
  • 1 celery stick
  • 2 tablespoons of tomato paste
  • 2 cups of cooked rice
  • 1 egg
  • 1/3 cup of parmesan cheese
  • 1/4 teaspoon of salt
  • season with pepper
  • 2 spring onions - finely chopped

Method:

  • Finely chop the garlic, onion and carrot
  • Finely dice the celery
  • halve the tomatoes
  • heat 1 tablespoon of olive oil in a large frying pan over a high heat
  • add the onion, celery, tomatoes and carrot and cook while stiring for 5 minutes
  • add the garlic and stir
  • stir through the tomato paste

Rhubarb Muffins

Rhubarb mixture

  • 300 grams of rhubarb
  • ½ cup of caster sugar
  • 1/4 cup of water

Muffin batter

  • 3 cups of SR flour
  • 1 cup of brown sugar
  • 1 teaspoon of cinnamon
  • 1 teaspoon of ground ginger
  • 1 ½ cups of milk
  • ½ cup of yoghurt
  • 2 eggs
  • 1/2 cup of vegetable oil

Crumble topping

  • ½ cup of self raising flour
  • 2 tablespoons of brown sugar
  • 40 grams of butter

Method:

  • heat oven to 180C
  • Line the muffin trays with  paper pans. Enough for everyone
  • Trim and chop the rhubarb into 2cm lengths. Place in a saucepan with caster sugar and water. Bring to a simmer and cook stirring for 5 minutes or until soft
  • Set aside to cool

Crumble:

  • place the flour, sugar and butter into a bowl and mix until combined. Set aside.

Muffin Batter:

  • In a large bowl, place the flour, brown sugar, cinnamon and ground ginger
  • In a jug mix the eggs, milk, yoghurt and oil. Pour into the muffin mix and stir
  • Divide the batter between the muffin tins, top each with the rhubarb mixture, then spoon over the crumble mix.

Bake for approximately 18 minutes.

As the weather has finally heated up, it’s tomato time in the garden.
