With a bountiful harvest of zucchini from The Patch early this year, The Patch Café has been a buzz with students creating delicious zucchini pasta salad served with garlic and herb bruschetta.
This year our theme is “Fast and Fresh”. We will try new dishes full of fresh ingredients that are simple enough for them to re-create at home. We will also talk more about choices, and how simple substitutions can make a big difference in terms of health benefits. This menu we swapped out white pasta for wholemeal or chick pea pasta, full of fibre and keeps us fuller for longer.
This pasta salad makes the perfect lunchbox dish, which is easily tailored to suit all tastes. Yum!
